Healthy Apple Cake

Morning Guys!

Good Morning with a healthy and tasty Apple Cake. This pic is far far far from the taste of this cake. So good! There’s a little bit of sugar and I’ve being using coconut sugar on my recipes and the results are delish!

I got the original recipe here – Tks Chelsea ❤ – and I did little changes. I added 1 full cup of chopped apples, I used plain greek yogurt instead vanilla flavored, 1/2 cup raisins and I used coconut sugar instead the brown sugar. You can also add pecans and it sounds an amazing idea! Mmmmmmmmm

Ingredients:

  • 1 cup applesauce
  • 1 teaspoon vanilla extract
  • 1/4 cup melted coconut oil
  • 1/3 cup Greek yogurt
  • 1 large egg
  • 1/2 cup coconut sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon each allspice and nutmeg
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup chopped apple
  • 1/2 cup raisins
  • 1 cup white whole wheat flour
  • 1/2 cup oat flour (blended oats)
  • Coconut sugar and cinnamon to the top

 

How to make it – By Chelsea’s Messe Original recipe:

  1. Preheat the oven to 350 degrees F. Lightly grease and flour a bread pan. (Don’t skip this step as the bread has a tendency to stick to the pan if not well greased.)
  2. In a large bowl, stir together the applesauce, vanilla extract, melted coconut oil (measure when it is melted not solid), and Greek yogurt until completely combined.
  3. Add in the egg and brown sugar. Mix.
  4. Add in the salt, allspice, nutmeg, cinnamon (add more spice if desired), baking soda, and baking powder.
  5. Peel and finely chop the apple discarding the core. Toss it with the lemon juice and then drain any extra juice. Toss with 1/2 tablespoon of flour and then add to the mixture. Stir in.
  6. Add in the white whole wheat flour (white all purpose flour works great too!) and the oat flour.
  7. To make the oat flour, blend regular old fashioned or quick oats in a blender or food processor until they resemble a flour. Measure AFTER blending and not before.
  8. Stir until JUST combined (don’t overmix with the flour added as that makes for a denser bread).
  9. Pour into prepared bread pan.
  10. Mix the brown sugar and cinnamon together with your fingers and sprinkle evenly to cover the entire bread. Start with 2 tablespoons and use an extra tablespoon of brown sugar if needed.
  11. Bake for 55-65 minutes (Mine always takes right around 60 minutes) or until a toothpick when inserted into the center comes out clean.

Spaguetti Squash with Spinach-tomato-Feta cheese 

Hi guys!

What are you having for dinner tonight? I don’t know about you, but when is too hot I prefer eat light and feel like I have real food. I think Spaghetti squash is perfect for those days. Of course it depends of the topping and the sides. I choose spinach-tomato-feta cheese for the top and I also had chicken, but sadly, it wasn’t done when I took the pic and I was starving and I couldn’t wait!🙊

This is how looks my light Spaguetti squash👌


Very easy to make the topping:

  • The spinach was left over I’d made with onions, garlic, olive oil and salt
  • Added marinara tomato sauce with pieces of tomatos
  • Feta cheese to taste
  • Almonds

How to make it:

  1. Mix everything!
  2. Heat
  3. Put on top of the Spaguetti squash
  4. Enjoy!

Canada Day with Smoothie

Morning Snack of the day

The kiwi isn’t just a sweet fruit, he’s full in vitamin A, B, C, E and K, potassium, folate and fiber💪 That’s why we call the kiwi a Super Fruit!

1 Week after knee surgery

Hi Guys,

Today’s post is about my knee surgery I did last Monday. Today there’s 1 week of my recovery and I want share with you what it looks like.

  • It hurts more than I expected. I don’t know why I though after a surgery I could not feel pain! lol But it was hard on 2 first days. After I felt just uncomfortable.
  • The medication I’m having for pain and anti-inflammatory is killing me. The pain-killer, get me dizzy and put me to sleep in minutes! The other one destroys my stomach!
  • I’m can’t walk yet and yesterday I started put my foot on the floor and tried very little steps.

Today is exactly a week after the surgery and I still need to rest a lot and take care of myself because of the medication. And the good part is I can straight my knee without pain anymore. And I can’t can’t can’t can’t wait to back to workout! …I know.. before I have fisio and etc..  Ah! And I miss going to work too! Isn’t like a vacation being at home recovering =( I miss being productive and my co-workers. Anyways! I’m good and the ripped meniscus is gone! Woohoo

Strawberry healthy Popsicle

I don’t know where you live, but here in Montreal it’s being hot! And I love it! I wish summer time forever☀️☀️☀️

And to make those days even better, Popsicle for all family and friends. This time I Did strawberry and I can’t wait to try different flavours!

You can eat as ice cream, just putting the mix in the freezer around 30 min. To make it a Popsicle it needs more time in the freezer. I promise next time take a step-by-step pic, but this time I couldn’t walk because my knee surgery and asked husband to make it while I’m looking everything from far! Lol

Enjoy!

Ingredients:

  • Greek yogurt
  • Frozen strawberries
  • Maple syrup to taste

How to make it:

This ice cream literally depends on your taste. I like a balance between the yogurt and fruits and not that sweet. So, the measure is up to you. Adding a little bit of each ingredient. For this one, you can do in a food processor or mix by hand. If you add more fruits better do in a food processor to make a creamy ice cream texture.

  1. First thing, add the yogurt and maple syrup and make sure they are well mixed.
  2. Add the fruits and mix it all
  3. Place them on the popsicle pan and freeze for 3 hours

Knee surgery in some hours!

Best PB-Chocolate Cake

This morning I’m enjoying a delicious PB Chocolate Cake! 🍫 I did this cake millions of times and never get tired. So good! ❤ This time I made with coconut sugar and it tastes as sweet as any other sugar you choose, but healthier. Enjoy! Have a great Sunday everybody!

Ingredients:

  • 1 cup pastry flour
  • 6 tbsp cacao or unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup sugar of choice – I used coconut sugar
  • 1/2 cup mini chocolate chips
  • 1/4 cup plain greek yogurt
  • 3/4 cup almond milk
  • 1/4 cup peanut butter
  • 2 tsp pure vanilla extract

How to make it:

  1. Preheat oven to 350 degrees F, and grease an 8-in square or round pan. Set aside.
  2. In a large bowl, combine the flour, cocoa powder, baking soda, salt, optional chips, and sweetener, and stir very well.
  3. In a new bowl, whisk together the nut butter, yogurt, milk, and vanilla.
  4. Pour wet into dry and stir until just combined (don’t over-mix), then pour into the greased pan.
  5. Bake 25 minutes or until batter has risen and a toothpick inserted into the center of the cake comes out mostly clean.

 

Banana-Chocolate Healthy Brownie

I don’t know why I never posted this cake before! I’ve beeing baking this cake so many times! It tastes like lightly sweet, moist, and chocolatey. Same words as Amber describe it on her blog, and I totally agree! Thanks Amber! ❤ You can find the original recipe here and I need to share my happiness with this cake. I made first time because I wanted some healthy treat for a brunch with friends and everybody LOVE it so bad! Including my Baby. Yes, I gave it to him, made with coconut sugar, and is still very healthy. And this is my family and friends favourite treat! I promise, i’ll take better pics next time, and it will be soon!

Ingredients:
  • 3 medium ripe bananas
  • ¾ cup brown sugar
  • ½ cup applesauce
  • 1 tsp vanilla
  • 1 large egg
  • 1 cup flour
  • ½ cup cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup semi sweet chocolate chips
  • 2 Tbsp mini chocolate chips for topping
How to make it:
  1. Mix the bananas and brown sugar until the bananas are mashed and the sugar is dissolved
  2. Mix the rest of the ingredients
  3. Bake at 350 degrees Fahrenheit for 25 to 35 minutes
